What is a good starter Anime/Manga?

I have watched some Anime in the past, but not that much. What is a good starter Anime, to give you an idea of what I have seen:

DBZ
The Last Airbender
Pokemon

Let me know your thoughts, of what is a good anime that isn't too mainstream!

There's a lot of genre to anime as with everything considered entertainment. People can't simply ask me what to watch because I have so much in mind (and probably most of them are not safe for first timers). I have to narrow it down in order to pick something and even then it's a long list for me haha xP

Do you like fantasy and scifi?
I'd recommend Tears to Tiara or Utawarerumono (both of them are from the same creator with somewhat of the same concept).
Erin the Beast Player is a good one as well.
Read or Die is an alright one to watch.
Digimon Tamers is one of my favorite <3
And I can't forget about Marchen Awaken Romance.

Do you like mechas (giant robots fighting other giant robots)?
Gundam Seed/Destiny
Code Geass (might be mainstream)
Gargantia.
Don't know other mechas since I don't generally look out for them.

Do you like mystery?
Gosick.
Or Detective Conan (but that goes on for ages)

Do you like drama?
Clannad comes to mind, but I suppose that's mainstream.
Saikano (not the anime because I laugh at the animation and art) is a good read.
Rozen Maiden is more tournament based, but it has its fair share of drama.
Rainbow: Nisha Rokubou no Shichinin.

Do you like romance?
Clannad is still here. Lol.

Are you feeling shoujo (anime intended for girls)?
Kimi ni Todoke (don't watch the second season... not until a season 3 is confirmed).
The new Sailor Moon has been real pleasant for me.

On the a little bit iffy in terms of "first time anime"

Sakurasou no pet na kanojo
One Piece
Bleach
Nisekoi
Shingeki no kyoujin

there's others but this is a good list to start with in my opinion

I am not a big fan of anime, but the manga's I love are from the author Junji Ito. He makes horrormanga in it's best form. It's disturbing, clever and well written. I am still reading Uzumaki which is a 600 page manga all based on the Fibonacci spiral.
