I don't understand, on the score analysis, am I supposed to look at ''search volume'' or ''monthly searches (estimate)''? Which one is better? And what does it mean when sometimes it shows ''insufficient data''? Please help!

You need to look at both. You definitely want search volume... if nobody is looking for that term then you should definitely look for a different term. But you also want to find one that has as little competition as possible. The best keywords possible are going to be those with the most traffic and the least competition.
