the beginning is the "easiest" because you can litterally do whatever you want (within terms of service) and you have very little to lose.
They ususally say it's "hardest" in terms of gaining views and subs... "yes" but don't even think about views and subs. The "hardest" part is learning how to do craft a compelling video, and that's a long journey in it'self. YouTube is a journey, not just a destination, and YouTube is more than about some vanity numbers, it's about enjoying the craft of film making and sharing those passions with like minded people.
In that regards, I always found the beginning really easy because there was less expectations. Once you get bigger, there's more pressure and expectations to know what you're doing. When you're beginning you can get away with silly editing mistakes, bad audio and such, because it's expected, it's a forever learning experience.
