I'd recommend getting a used Lumix FZ100/200/300

They record in 1080p@60 (300 in 4K@30 too), have a clean HDMI output, big optical zoom, flip out screen, hotshoe, mic in - mostly all you need

Or...

Spend $200 on lighting and use your phone camera. There are tons of YouTube videos showing how better lighting can significantly improve any camera.
