I noted that my view count per video is different on the Youtube app, The Youtube Studio

yep, that's been a thing for years. Once you get monetised you'll even see a big differance between the estimated revenue you make on adsense. Apparently it has to do with the validation of data, one app being quicker to update it's data than the website etc.
