We have just over 300 subscribers, so we are a small channel. We know that for some platforms like Twitter, you should thank your new followers. Should we be doing that for YouTube subscribers?

You can if you want. I'd rather spend that time conversing with people who take the time to comment on my videos. They're the ones really committed.
I agree with this! And plus YT now shows if they're subbed in the comments, so that helps A TON!
I'd say take that opportunity to thank them and start a conversation with them
